The Beating Heart of the Santuario
Like all places of true rest, the beating heart of the Santuario is its kitchen — a celebration of the cultural richness brought by pilgrims who travelled through this land. Our dishes draw on Moorish influences and local Aragonese traditions, from a time when faith and flavour travelled side by side.
Slow-cooked lamb with harissa, spiced buckwheat with golden raisins, and wild herbs gathered from the surrounding mountains speak of a heritage that lives on through taste. The scent of cumin and cinnamon mingle with rosemary and thyme – a fusion of shared histories.

Sit and study the procession of ancient figures carved into the sandstone columns, as summer swallows swoop and call overhead. There is a quiet simplicity here that invites you to linger.
